LBC #1 - Wedding Anniversary Cake

Hi!
This is officially my first Life Between Crafts post!

I explain everything here, but basically, I’m a university student working through quite a laborious degree, so most of my DIY tutorials and other content on the blog are created during my summer holidays. But to keep in touch with you guys during the semesters, I write these LBC posts about my off-camera projects, life stories, new ideas—pretty much anything I feel like sharing with you to hopefully inspire you as well.

So, today I’m gonna tell you about the cake I made for a wedding anniversary that I think turned out so cute! Baking is one of my favorite hobbies, and spending the whole day preparing a party is no problem at all for me. I always have a blast!

Before I get into how I made the cake, what I’d do differently, and what the guests thought of it, here’s a photo of how it came out:


Now, hear me out. I’m definitely not a professional baker and there’s no doubt I still have a lot of techniques to learn, but I think the cake turned out SO cute. So cute, in fact, that I had a hard time cutting into it! But let’s jump to what matters most:

How I made it:

My goal here isn’t to give you the exact recipe (because, of course, I didn’t create it, and that would mean sharing someone else’s work), but I can share it if you want. For now, I’ll just walk you through how the different steps went - from baking to decoration.

For the flavor, I went with chocolate. I tried to find a rich but not overly sweet recipe, and it turned out really good! It wasn’t dry or too moist either - the texture and flavor were just right. Baking it went super smoothly, but I’ll admit part of it broke when I unmolded it. Not a huge problem though - I simply used the filling as glue to fix it.

Speaking of filling, I made a red fruit jam because, in my opinion, it’s the perfect pair for chocolate - and they’re my favorite fruits. It was super simple to make: just frozen fruits and sugar, basically. I wanted to use a technique I’d seen on baking shows to add as much filling as possible without the risk of overflow (by creating a frosting barrier), but unfortunately, I didn’t have enough frosting to do it. So that’s definitely something I’d do differently next time.

For the frosting, I used buttercream - my forever go-to. I always use the same recipe, which replaces some of the butter with cream cheese, and it gives me a buttercream that’s not too sweet but still firm enough for a clean finish. I had a little trouble with it this time because I forgot to take the butter out of the fridge to reach room temperature, but it worked out okay!

I’m still not able to create those seamless finishes that professional bakers do, but I’ll get there someday. I even got myself a spinning base and a completely flat plate to help me next time. Yes, it’s that serious.
For the color, I kept it chocolate-themed by mixing in cocoa powder as a natural dye, which gave it a nice light brown shade.

For the final decoration, I made a chocolate ganache. Not gonna lie - I had some trouble with it. I had no idea that when you add the cream, you have to be super careful not to let it curdle. When that happens, the ganache looks kind of wet because the fat separates from the cream. The good news is: it’s totally fixable! And that’s something I didn’t know before. I once threw out an entire ganache because I thought it was ruined, when all I needed to do was warm up a little milk, add a tablespoon to the ganache, and whisk quickly. Voilà - smooth and perfect again. You just keep learning!
With the ganache, I made drips along the edge of the cake. I was aiming for thick, controlled drips, but maybe the ganache should’ve been a bit thinner.

I finished it with strawberries, blueberries, and Twix bars. And now for the fancy part: I sprinkled edible gold glitter over the decoration and it turned out so glamorous! It’s amazing how glitter always makes everything look extra exquisite.

And that’s how my little masterpiece was born. I had so much fun making it (as always) and learned a bunch of new things - the ganache trick being the biggest one!

As for the guests’ reaction: they loved it! They said it was both pretty and delicious. So, I’m calling it a success and proudly adding it to my little cake gallery.
